I came across a piece of 5.5 pound piece of Beef Round Eye of Round Whole, USDA Prime on Janurary 2022 at a price of $4.79 per pound from Costco. With the rising prices of meat in 2022, I figured I'd give this cut of beef a try. In the past, I've tried beef round in the past in small chunks in a slowly boiled soup, but it always turns out tough. In generally, beef round is a tough cut of meat.
Generally, the meat turned out tender, but still chewy. The chewy is probably coming from the cut of beef. I plan on trying the other half of this Sous Vide to attempt to tenderize this cut of meat.

3 lb Beef Round

Salt

Pepper
Instructions

Salt and pepper the Beef Round to your preference. Let rest to your desired amount, up to one day.

Pre-heat the oven to 500F. Use a full oven and not a conventional oven.

Put your salt and peppered beef round to a baking tray and place into the oven. Immediately drop the oven temperature from 500F to 475F. No need to add water or to cover the beef.

Bake for 21 minutes (or 7 minutes per lb).

Turn off the oven and let the residual heat cook the Beef Round for another 2.5 hours. During this time, do not open the oven.

Remove the roast from the oven and the internal temperature should be at least 145F.

Thinly slice and serve the roast.
